SPRING MILL NEWS:

Did you know that Mounted Miracles, a program of Ryan’s Hope, operates out of Aintree?  Mounted Miracles currently offers 2 programs: hippotherapy (horse therapy in Greek) to moderate, severe and profoundly disabled children and  adults, as well as therapeutic riding.  Hippotherapy teaches functional skills rather than riding skills and is used as an adjacent therapy to children already receiving physical, occupational, and speech therapy.  Therapeutic riding is best for mild to moderate disabled children to teach basic horsemanship and riding skills.  To find out how you can donate or volunteer, please contact Corinne Derenburger at ryanshopeinc@bellsouth.net or 861-7039.

AS THE WHEEL TURNS….THE HAMSTER’S CORNER

By Caroline Milot

It’s that time of year again – RENEWAL TIME!!!  You can renew your USEF & USHJA memberships on line and print temporary cards, or you can renew via snail mail.  Remember, you must be a member of both USEF & USHJA!  If you renew both organizations at the same time, you will receive one card.  As in years past, as soon as you receive your 2007 membership cards, make sure I get a copy of them for the horse show book.  Don’t forget to renew your horse/pony’s membership also.  I will also need copies of these too.  I will gladly check in Spring Mill Farm exhibitors, but I can only do so if I have copies of all current membership cards for horse and rider.

We will be switching to morning and afternoon turn out now that the heat of summer is gone, so have your horse or pony’s inside and outside clothing on their stall.  Blankets and Sheets look alike, so to prevent your horse or pony’s clothing items ending up on someone else; make sure they are clearly labeled with either horse/pony’s name or owner’s name!

Welcome to our new Aintree transplants – the Christians and the Ernsts.  Grace and “Chip”, and McKenzie and “Stripe” are now middle barn pony kids!

GOURMET GALLOP!

The holidays are upon us…what will you be serving?

“Hair of the Dog Cranberry Sauce:

1 – 12 oz. bag fresh cranberries
1 ¼ C. sugar
¼ t. ground cinnamon
1/3 C. bourbon (or more!!!)

Combine ingredients except bourbon in a small baking dish and cover.  Bake for about 55 minutes and stir.  Return dish to oven for about 10 more minutes and then stir in bourbon to taste.  Cool to room temp.  Cool at least one hour before serving.  Will keep several weeks in the refrigerator.

“Slap Yo’ Mama Sweet Potatoes”

4C. canned sweet potatoes or yams drained
2 C. white sugar
4 eggs beaten
1 C. evaporated milk
1 t. ground nutmeg
1 t. ground cinnamon
2 C. mini marshmallows
1 C. flaked coconut
1 ½ C. crushed cornflakes
½ C. packed brown sugar
1 C. chopped pecans
1 1/2 C. margarine melted

Pre-heat oven to 400 degrees.  Grease 13 x 9 baking dish w/ butter.  In large bowl, mash sweet potatoes and mix in white sugar, ¾ C. margarine, milk, nutmeg, cinnamon, marshmallows and coconut.  Scoop mixture into dish and bake 20 minutes.  In a small bowl, mix remaining margarine, cornflakes, brown sugar, and pecans.  Spread this over baked casserole and return to oven for 10 – 15 minutes.

Thanks to Terry Lynn and Mary Haley Hamm for the delicious recipes!!!
